Rapid yet gentle chilling and freezing is essential to prevent fish from losing its original quality due to high water activity, its neutral pH value (which is ideal for microorganisms) and the presence of enzymes, which rapidly undermine both taste and smell. At BOC, we have a wide range of dedicated cryogenic chilling and freezing solutions that maintain safety and quality standards across the entire seafood chain. Highlights include our ACCU-CHILL® BI in-line chilling system for fish patties, our CRYOLINE® CWI freezer for individually quick-frozen (IQF) foods such as shrimps and our CRYOLINE® MT freezer for fish fillets. Cryogenic freezers can also enhance processing, enabling you, for example, to add protective glazes to fish.
Packaging atmospheres play an equally important role when it comes to fish. Our specially developed modified atmosphere packages (MAP) – with bespoke mixtures tailored to the requirements of different fish types – can extend shelf-life by several days.
And to ensure an uninterrupted cold chain right up to the consumer, you can rely on our in-transit refrigeration systems to protect your seafood after it leaves your plant.
